The rare agave Cenizo grows wild on the steep hillsides of Durango, Northern Mexico for 15 long years, before it is ready for harvesting. We use the traditional artisanal process of an earthen pit for cooking the agave, a tahona for milling,with fermentation using natural yeast and distillation in small batches using wooden stills. This handcrafted mezcal produces flavors that are exotically intense with rich earthy tones and a hint of smoke. Whether sipped neat or mixed in cocktails, Cenizo Mezcal is a spirit that celebrates tradition and offers a taste of the rich culture and heritage of Mexico.
